Pickled red onions
4 red onions thinly sliced
1/4 cup fresh orange juice
juice of one lemon or lime
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes (to taste)
1/2 teaspoon dried oregano
Boil 2 cups water, then turn off.
Submerge sliced onions for about 10 minutes. drain and remove. ( the
purple broth may be reserved for soup stock)
Toss with next 5 items.
*Great on sandwiches salads or by themselves.
Corn and Black Bean Salsa
One can corn
One can black beans
One bunch green onion chopped
One bottle favorite salsa
Mix all and serve with corn chips
